Triple Chocolate Melting Snowman Cupcake Recipe

Triple Chocolate Marshmallow Snowman Cupcakes

After a confusing week I went back to where I feel most at home, with my baking. Seeing as how it’s Christmas time, the time of decadence I went all out with these triple chocolate marshmallow cupcakes!



Cupcake Ingredients

  • 100g Butter
  • 100g Caster Sugar
  • 100g Dark Chocolate
  • 2 Medium Eggs
  • 1 tsp Vanilla Extract
  • 150g Plain Flour
  • 75g Self Raising Flour
  • 1 tsp Bicarbonate of Soda
  • 50g Cocoa Powder 
  • 200ml Buttermilk or Plain Yoghurt
  • 50g Milk Chocolate

Marshmallow Frosting/Decoration Ingredients
  •        250g Caster Sugar
  •        120g Golden Syrup
  •        4 Egg Whites
  •        50g White Chocolate
  •        Mint Flutes/Pretzels



Method
  1. Preheat the oven to 180C/350F/Gas 4. Line twelve muffin tins with muffin cases.
  2. Beat together the butter and sugar with a hand-held mixer until very light and fluffy. While beating heat the dark chocolate in the microwave for 2 minutes, stirring after 1 minute.
  3. Beat the eggs and then slowly add to the chocolate butter sugar mixture, while using the hand mix. Add the vanilla extract last.
  4. Sift together the flours, bicarbonate of soda and cocoa powder into a large mixing bowl. Add the roughly cut dairy milk chocolate.
  5. Gently pour into the chocolate butter mixture the buttermilk. Ensuring that they are well mixed.
  6. Fold the flour mixture into the wet mix slowly, adding it in bit by bit.
  7. Bake in the oven for 18-20 minutes, until cooked.
  8. Place on a wire rack to cool. While the cakes are cooling get started on the marshmallow frosting.
    For the icing, place the sugar, golden syrup and four tablespoons of water into a large saucepan. Heat gently, stirring until the sugar has dissolved.
  9. Bring the sugar syrup to the boil and cook for about 5-6 and then remove the pan from the heat.
  10. While the syrup is boiling, in a large bowl whisk the egg whites with a hand-held mixer until soft peaks form when the whisk is removed.
  11. Put the mixer on the lowest speed possible and gently pour in the sugar syrup in a thin steady stream - be careful not to pour the syrup onto the beaters as it may splash onto your hands and burn.
  12. Once all the syrup has been added increase the speed of the mixer and mix for about 10 minutes until the icing is completely cool, thick and glossy. It may be tiresome but it’s necessary in order to have upright snowmen.
  13. Pipe a circle of icing onto each cupcake, to the design of your choice
  14. I melted the white chocolate and dyed it orange to create the noses, and used black icing for the eyes.Using the mint flutes/pretzels you can make arms for your snowman. I chose not to, to keep it simple.
