Bento Box!

Sophie here. For my first food post I'm sharing my healthy soboro work lunch recipe
Soboro is a meaty topping that you add to rice or it can be used as a tasty omelette ingredient. You can even stir fry it with vegetables. Its super versatile!

This is my recipe for soboro, it can make 3-4 servings, or you can freeze the finished soboro for a later date.


Prep Time: 2 minutes, or however long it takes you to mince ginger.
Cooking Time: 20-25 minutes.


Ingredients:



500g Turkey Mince
80ml Chicken Stock
2 Tbsp of Grated Ginger
2Tbsp of Sugar
3Tbsp Mirin
2Tbsp Rice Vinegar
2Tbsp Soy Sauce
Pinch of Salt

Method

1) Put everything into a saucepan.
2) Turn the temperature up to a medium heat and stir the mixture, don't stir too vigorously or the meat will completely split and be grainy, but if you don't stir enough it'll lump together.
3) After stirring for about 10 minutes (not only is this recipe healthy but you'll get some upper arm exercise!), leave to simmer on a low heat until most of the liquid has evaporated.
4) Admire your finished soboro. It really is that easy!

You can also replace the turkey mince with chicken or pork. Turkey is more lean and healthy but does have less flavour than the other two.

For the rest of my healthy bento I just prepared some rice and quickly fried sugar snap beans and baby corn together. The soboro can be quite sweet for a main, so the garlic fried vegetables help to balance this out.

I have pomegranate seeds for dessert, but feel free to substitute with the fruit of your choice.

And voila! A healthy bento which takes about 30 mins to prepare. Enjoy :D
